All About Sauce

A.            Definisi SAUCE

SAUCE adalah cairan yang dikentalkan hingga semi liquid yang akan ditambahkan kedalam makanan untuk memberi rasa dan menambah kelembaban pada makanan tersebut, baik manis maupun asin / gurih.

B.        Penggolongan SAUCE.
            SAUCE  dapat digolongkan menjadi beberapa golongan berdasarkan  :
            a.  Warna                    :  White Sauce, Brown Sauce
            b.  Bahan Dasar         :  Bone, Meat, Vegetables, Butter or Oil
            c.  Temperatur            :  Hot Sauce, Cold Sauce

            Hot Sauce  :
1. White Sauce         :  Milk + White Roux …………………………………….  Bechamel
2.  Blonde Sauce       :  White Roux + White Stock …………..………..……… Veloute
3. Brown Sauce        :  Brown Stock + Tepung Terigu ……………….………. Demiglace

   Turunan Demiglace  :

   Chasseur Sauce     :  Demiglace + Shallot + Mushroom + White Wine + Tomato + Parsley + Taragon
   Mushroom Sauce   :  Demiglace + Shallot + White Wine + Mushroom + Cream
Merchand de Vin    :  Demiglace + Red Wine + Chopped Shallot
Robert Sauce         :  Demiglace + White Wine + Chopped Onion
Bercy Sauce           :  Demiglace + White Wine + Chopped Shallot
Piquante Sauce      :  Demiglace + Wine Vinegar + Chopped Shallot
Lyonnaise               :  Demiglace + White Wine + Chopped Onion + Vinegar

ª       Red Sauce            :  White Stock + Tomato Pasta + Herb & Spices + Tepung Terigu  …

Tomato Sauce
ª       Yellow sauce         :  Egg Yolk + Butter + White Stock / Cream … 

Hollandaise Sauce
ª       Butter Sauce         :  Butter + Salah Satu Bahan Lain ………… 

Maitre d’Hote Sauce
ª       Special Sauce       : Bahan dasar yang digunakan berbeda dengan sauce lainnya.  Sifat sauce ini bervariasi dan biasanya disajikan dengan special dishes.
Contoh  :  Apple Sauce, Curry Sauce, etc.

            Cold Sauce  :
Mayonnaise          :  Salad Oil + Egg Yolk + Vinegar + Mustard + Salt & Peppers
                                       Turunan Mayonnaise  :
Cocktail Sauce       : Mayonnaise + Tomato Ketchup + Maggie + Chilli Sauce + Cream + L&P
Thousand Island    : Cocktail Sauce + Onion + Parsley + Gherkin + Paprika + Boiled Egg Yolk
Tar-Tar Sauce         :  Mayonnaise + Boiled Egg + Onion + Chives
French Dressing   :  Salad Oil / Air Jeruk Nipis + Salt & Peppers
Vinaigrette Sauce : Salad Oil + Red Wine + Vinegar + Onion + Gherkin + Parsley + L&P + Salt & Peppers
Bernaise Sauce    : Taragon Vinegar + Black Peppers + Shallot + Egg Yolk + Butter + L&P + Salt & Peppers + Parsley
Special Cold Sauce :Bukan turunan dari Mayonnaise maupun French Dressing.
                                       Contoh  :  Cumberland Sauce, Horseradish Sauce.

            Juice / Drippind daging atau unggas + Roux + Stock + Milk / Cream
ü  Coulis Sauce  :
            Vegetables / Shellfish Puree

ü  Sweet Sauce  :
à biasa dipergunakan sebagai isi makanan / pelengkap
